Most people use bell peppers in salads and such, but haveyou eaten a bell pepper plain, just taking a bite out of one? Most people don’tbut would you if I told you eating certain bell peppers can help preventcertain Cancers? Yes, that is right. It is proven that by eating certain bellpeppers, you can prevent some cancers. Bell peppers are loaded with a bunch ofVitamin C. The red peppers are also loaded with 3 times as much Vitamin C asthe green peppers and a lot of beta Carotene, a nutrient mostly in carrots.                The bell peppers can come in a variety of colors and can range in flavor , too.For example, the red peppers are just riper green bell peppers and are sweeter.As a bell pepper matures, it’s color changes and it becomes sweeter so thegreen peppers are more tart than the red bell peppers. Also, if you store bellpeppers in a bag I the refrigerator, without washing them, they will stayfresher and last longer.                            Bellpeppers are in good supply over the whole year, but they are most plentifulduring the summer months. Bell peppers can range in size and shape, but youstill want to harvest them at the same time.                                                                                              Youwill know when a bell pepper is ready to harvest when their skin is firm withno wrinkles. The stem must be a fresh green color and the bell pepper itselfshould feel a bit heavy. Do not eat peppers with ugly black spots, sunkenspots, or slashes on them. After all, there is only one perfect pepper!
